Coleman's Virginia Peanuts - chocolate, cocktail, roasted - hams, recipes for boiled peanuts.
Sugar Coated Peanuts
1 cup granulated sugar
½ cup water
2 cups Coleman’s Raw Redskins out of the shell
Dissolve sugar in water in sauce pan over medium heat. Add peanuts and continue
to cook over medium heat, stirring frequently. Cook until peanuts are completely
sugared (Coated and no syrup). Pour on ungreased cookie sheet, separate peanuts
with a fork. Bake at 300° F for approximately 30 minutes, stirring at ten minute
intervals.

Parmesan Peanuts
2 tbsp. peanut oil
1 lb. Coleman’s Home cooked cocktail peanuts, unsalted
1 tsp. garlic salt
1 tbsp. Parmesan Cheese, grated
Heat peanut oil in shallow baking pan in 350° F oven for about 5 minutes.
Remove from oven, add peanuts and stir until coated with the hot oil. Return
to oven for about 5 minutes. Remove from oven, sprinkle with Parmesan Cheese
and garlic salt. Stir to coat.

Chocolate & Butterscotch Coated Peanuts
1 package (6 oz.) semi-sweet chocolate or butterscotch bits
2½ cups Coleman’s Home cooked cocktail peanuts, unsalted
Melt chocolate (or butterscotch) pieces in top of double boiler over hot (not boiling) water. Add peanuts and stir to coat. Turn out on waxed paper, separate with fork. Allow to cool.

Spiced Peanuts
1 cup granulated sugar
½ cup water
1 tsp. cinnamon
½ tsp. nutmeg
½ tsp. ground cloves
1 lb. Coleman’s Home cooked cocktail peanuts, unsalted
Boil sugar, water and spices to hard crack stage (293° F). Drop peanuts into
syrup. Stir until nuts are dry looking. Pour out on waxed paper and let stand
until cold and dry.

Southern Style Peanut Brittle
2 cups granulated sugar
1 cup light corn syrup
½ cup water
½ tsp. salt
3 cups Coleman’s Redskin Peanuts
2 tbsp. butter
2 tsp. baking soda
In heavy saucepan heat sugar, syrup, water and salt to a rolling boil. Add
peanuts and reduce heat to medium, stirring constantly. Cook to hard crack
stage (293° F). Add butter and baking soda. Beat rapidly and pour onto a buttered cookie sheet spreading to ¼ inch
thickness. When cooled, break into pieces.

Peanut Butter
1 cup Coleman’s Home Cooked Cocktail Peanuts, salted
1 tbsp. peanut oil
½ tsp. salt
Combine all ingredients in electric blender or food processor. Blend
until mixture is like paste. ( This will take several minutes and
you may have to add more peanut oil.) Store in a tightly covered
container. Stir before using. Homemade peanut butter separates on
standing.

Southern Style Peanut Pie
2 cups Coleman’s Home Cooked Cocktail Peanuts, chopped
4 eggs, beaten
pinch of salt
1 tsp. Vanilla
1 ½ cups light corn syrup
1 tbsp. butter, melted
1 cup sugar
Preheat oven to 350°
Mix all ingredients well and pour into unbaked 9” pie crust. Bake approximately
1 hr. or until knife inserted in center comes out clean.
